This fully vegan cake-like loaf gets its lovely marbled look from a cocoa batter swirled through an orange-scented zucchini batter, and stays wonderfully moist thanks to the finely grated zucchini.

Ingredients

  • 2 oranges, zested and juiced
  • 30 ml (2 tbsp) ground flaxseed
  • 150 g (¾ cup) sugar
  • 10 ml (2 tsp) vanilla extract
  • 15 ml (1 tbsp) ground cardamom
  • 375 ml (1 ½ cups) grated zucchini
  • 75 ml ( cup) vegetable oil
  • 225 g (1 ½ cups) all-purpose flour
  • 10 ml (2 tsp) baking powder
  • 2.5 ml (½ tsp) baking soda
  • 2.5 ml (½ tsp) salt
  • 30 ml (2 tbsp) cocoa powder
  • 50 g dark chocolate, chopped
  • 45 ml (3 tbsp) icing sugar
  • Flaky salt, to taste

Instructions

  1. Preheat and prep the pan. Preheat the oven to 175 °C (350 °F). Butter a 25 x 10 cm (9 x 5 in) loaf pan and line it with parchment paper.
  2. Make a flax egg. Set aside 15 ml (1 tbsp) of the orange juice for the glaze. Pour the rest into a small bowl with the ground flaxseed. Stir well and let thicken for 5 minutes.
  3. Infuse the sugar. In a bowl, combine the sugar and orange zest. Rub the zest into the sugar with your fingers until fragrant.
  4. Add the wet ingredients. Add the vanilla extract, ground cardamom, grated zucchini (with its juice), and vegetable oil to the sugar mixture.
  5. Whisk together. Whisk vigorously until the mixture is smooth and well combined. Set aside.
  6. Combine the dry ingredients. In a large bowl, sift together the flour, baking powder, baking soda, and salt. Mix and set aside.
  7. Bring it together. Pour the wet ingredients over the dry ingredients. Using a wooden spoon, stir just until combined, being careful not to overmix.
  8. Make the cocoa batter. Transfer half of the batter to a second bowl. Add the cocoa powder and chopped dark chocolate, and stir gently to combine.
  9. Layer the batters. Using a spoon or scoop, drop three dollops of the plain batter, spaced apart, into the bottom of the pan. Add three dollops of the cocoa batter in between them to create a checkerboard pattern.
  10. Repeat. Layer the remaining batter on top, alternating between the two kinds.
  11. Create a marbled look. Drag a knife through the batter in a few wave-like motions to form a marbled pattern.
  12. Bake. Bake for 45 to 55 minutes, or until a toothpick inserted in the centre comes out clean. Let rest for 10 minutes before unmoulding.
  13. Make the glaze. In a small bowl, whisk the reserved orange juice with the icing sugar until smooth.
  14. Glaze and finish. Spread the glaze over the warm loaf with an offset spatula or pastry brush. Sprinkle with flaky salt, to taste.
  15. Slice and serve.

Notes & Tips

  • Chill the batter briefly if it feels too loose to hold its shape when layering the checkerboard pattern.
  • Squeeze the excess moisture out of the grated zucchini if it seems very wet, but keep the juice to add back into the batter for flavour.
  • Store leftovers wrapped tightly at room temperature for up to 3 days, or refrigerate for up to a week.

  • 225 g (1 ½ tasse) de farine tout usage
  • 10 ml (2 c. à thé) de poudre à pâte
  • 2,5 ml (½ c. à thé) de bicarbonate de soude
  • 2,5 ml (½ c. à thé) de sel
  • 30 ml (2 c. à soupe) de poudre de cacao
  • 50 g de chocolat noir, haché
  • 45 ml (3 c. à soupe) de sucre à glacer
  • Flocons de sel, au goût

Instructions

  1. Préchauffer et préparer le moule. Préchauffer le four à 175 °C (350 °F). Beurrer un moule à pain de 25 x 10 cm (9 x 5 po) et le tapisser de papier parchemin.
  2. Préparer l’œuf de lin. Réserver 15 ml (1 c. à soupe) du jus d’orange pour le glaçage. Verser le reste dans un petit bol avec les graines de lin moulues. Bien mélanger et laisser épaissir 5 minutes.
  3. Parfumer le sucre. Dans un bol, mélanger le sucre et le zeste d’orange. Masser le zeste dans le sucre avec les doigts jusqu’à ce qu’il soit bien parfumé.
  4. Ajouter les ingrédients humides. Ajouter l’extrait de vanille, la cardamome moulue, le zucchini râpé (avec son jus) et l’huile végétale au mélange de sucre.
  5. Fouetter. Fouetter vigoureusement jusqu’à l’obtention d’une texture homogène. Réserver.
  6. Mélanger les ingrédients secs. Dans un grand bol, tamiser la farine, la poudre à pâte, le bicarbonate de soude et le sel. Mélanger et réserver.
  7. Assembler la pâte. Verser les ingrédients humides sur les ingrédients secs. À l’aide d’une cuillère de bois, mélanger juste assez pour humecter le tout, sans trop brasser.
  8. Préparer la pâte au cacao. Transférer la moitié de la pâte dans un deuxième bol. Ajouter la poudre de cacao et le chocolat noir haché, puis mélanger doucement.
  9. Superposer les pâtes. À l’aide d’une cuillère, déposer trois boules de pâte pâle, espacées, au fond du moule. Ajouter trois boules de pâte au cacao entre elles pour former un damier.
  10. Répéter. Superposer le reste de la pâte en alternant les deux types de pâte.
  11. Marbrer. Tracer quelques mouvements en vagues dans la pâte avec un couteau pour créer un effet marbré.
  12. Cuire. Cuire de 45 à 55 minutes, ou jusqu’à ce qu’un cure-dent inséré au centre en ressorte propre. Laisser reposer 10 minutes avant de démouler.
  13. Préparer le glaçage. Dans un petit bol, fouetter le jus d’orange réservé avec le sucre à glacer jusqu’à l’obtention d’une texture lisse.
  14. Glacer et terminer. Étendre le glaçage sur le pain encore tiède avec une spatule coudée ou un pinceau. Parsemer de flocons de sel, au goût.
  15. Trancher et servir.

Notes & conseils

  • Mettre la pâte au frigo quelques minutes si elle semble trop liquide pour bien tenir en damier.
  • Presser l’excédent d’eau du zucchini râpé s’il est très humide, mais garder le jus pour le remettre dans la pâte.
  • Se conserve emballé hermétiquement à température ambiante jusqu’à 3 jours, ou au frigo jusqu’à une semaine.
