A protein-packed mix of textured vegetable protein and black beans, pressed onto tortillas and seared until crispy, just like the viral smash tacos, but fully plant-based.

Ingredients

Filling

  • 250 ml (1 cup) textured vegetable protein (TVP)
  • 30 ml (2 tbsp) nutritional yeast
  • 15 ml (1 tbsp) ketchup
  • 15 ml (1 tbsp) soy sauce
  • 5 ml (1 tsp) steak spice
  • 5 ml (1 tsp) garlic powder
  • 5 ml (1 tsp) onion powder
  • 180 ml (3/4 cup) boiling water
  • 1 can (540 ml / 19 oz) black beans
  • Salt and pepper, to taste

Sauce

  • 125 ml (1/2 cup) vegan mayonnaise
  • 1 French shallot, minced
  • 30 ml (2 tbsp) relish
  • 15 ml (1 tbsp) ketchup
  • 15 ml (1 tbsp) mustard
  • Hot sauce, to taste

Assembly

  • 8 whole wheat tortillas
  • Cooking oil, as needed
  • Vegan cheese, to taste
  • 1 tomato, sliced
  • 4 romaine lettuce leaves
  • 2 dill pickles, sliced
  • Easy pickled red onions, to taste

Instructions

  1. Rehydrate the protein. In a bowl, combine the textured vegetable protein with the nutritional yeast, ketchup, soy sauce, spices, and boiling water.
  2. Let it sit. Stir well and let rest for 5 minutes, or until the liquid is fully absorbed.
  3. Mash the beans. In a separate bowl, roughly mash the black beans with a fork, potato masher, or immersion blender, leaving some texture (a food processor also works, just pulse lightly).
  4. Combine. Fold the mashed beans into the rehydrated protein mixture and let rest for another 5 minutes.
  5. Season the sauce. In a small bowl, whisk together the vegan mayonnaise, shallot, relish, ketchup, mustard, and hot sauce. Set aside.
  6. Portion the filling. Scoop about 75 ml (1/3 cup) of the protein mixture onto a tortilla and press it down firmly so it sticks and covers most of the surface.
  7. Sear the tortillas. Heat a little oil in a nonstick skillet over medium-high heat. Add 2 to 3 topped tortillas at a time, filling-side down.
  8. Crisp both sides. Cook for 3 to 4 minutes, or until the filling is golden brown, then flip and cook the other side for 1 minute. Remove from the pan and repeat with the remaining tortillas.
  9. Assemble and serve. Top each tortilla with vegan cheese, tomato, lettuce, pickles, pickled onions, and sauce. Serve the tacos right away.

Notes & Tips

  • Make the pickled onions ahead of time so they’re ready when you assemble the tacos.
  • Leftover filling keeps well in the fridge for a few days and reheats nicely in a skillet.

  • 1 conserve (540 ml / 19 oz) de fèves noires
  • Sel et poivre, au goût

Sauce

  • 125 ml (1/2 tasse) de mayonnaise végétalienne
  • 1 échalote française, hachée finement
  • 30 ml (2 c. à soupe) de relish
  • 15 ml (1 c. à soupe) de ketchup
  • 15 ml (1 c. à soupe) de moutarde
  • Sauce piquante, au goût

Montage

  • 8 tortillas de blé entier
  • Huile de cuisson, au besoin
  • Fromage végétalien, au goût
  • 1 tomate, tranchée
  • 4 feuilles de laitue romaine
  • 2 cornichons à l’aneth, tranchés
  • Oignons rouges marinés faciles, au goût

Instructions

  1. Réhydrater la protéine. Dans un bol, mélanger la protéine végétale texturée avec la levure alimentaire, le ketchup, la sauce soya, les épices et l’eau bouillante.
  2. Laisser reposer. Bien brasser et laisser reposer 5 minutes, jusqu’à ce que le liquide soit complètement absorbé.
  3. Écraser les fèves. Dans un autre bol, écraser grossièrement les fèves noires à la fourchette, au pilon ou au pied-mélangeur, en gardant un peu de texture (un robot culinaire fonctionne aussi, mais pulser doucement).
  4. Combiner. Incorporer les fèves écrasées à la protéine réhydratée et laisser reposer encore 5 minutes.
  5. Assaisonner la sauce. Dans un petit bol, fouetter ensemble la mayonnaise végétalienne, l’échalote, le relish, le ketchup, la moutarde et la sauce piquante. Réserver.
  6. Portionner la garniture. Déposer environ 75 ml (1/3 tasse) du mélange sur une tortilla et presser fermement pour qu’il colle bien et couvre la majorité de la surface.
  7. Saisir les tortillas. Chauffer un peu d’huile dans un poêlon antiadhésif à feu moyen-élevé. Déposer 2 à 3 tortillas garnies à la fois, le côté garni vers le bas.
  8. Dorer des deux côtés. Cuire de 3 à 4 minutes, jusqu’à ce que la garniture soit bien dorée, puis retourner et cuire l’autre côté 1 minute. Retirer du poêlon et répéter avec les tortillas restantes.
  9. Assembler et servir. Garnir chaque tortilla de fromage végétalien, de tomate, de laitue, de cornichons, d’oignons marinés et de sauce. Servir les tacos immédiatement.

Notes & conseils

  • Préparer les oignons marinés à l’avance pour qu’ils soient prêts au moment de l’assemblage.
  • Le reste du mélange se conserve quelques jours au frigo et se réchauffe bien à la poêle.
