Creamy polenta makes a cozy base for saucy mushrooms with garlic, tomato paste, soy sauce, and lime. It is simple enough for a weeknight, but still feels special served in shallow bowls.
Ingredients
Polenta
- 160 g (1 cup) stone-ground polenta
- 30 ml (2 tbsp) olive oil
- Unsweetened plant-based milk, as needed (optional)
Mushrooms
- 30 ml (2 tbsp) olive oil
- 450 g (1 lb) mushrooms, sliced
- 3 garlic cloves, minced
- 30 ml (2 tbsp) soy sauce
- Juice of 1/2 lime
- 125-250 ml (1/2-1 cup) water, as needed
- 15 ml (1 tbsp) tomato paste
- Freshly ground black pepper, to taste
Instructions
- Cook the polenta. Prepare the polenta according to the package directions. Stir in 2 tablespoons olive oil, cover, and keep warm.
- Brown the mushrooms. Warm the remaining 2 tablespoons olive oil in a large lidded pan over medium heat. Add the mushrooms and saute for 5 minutes, then stir in the garlic and cook 1 minute more.
- Make the sauce. In a small bowl, whisk together the soy sauce, lime juice, 1/2 cup water, and tomato paste. Pour into the pan, stir well, bring to a boil, then cover and reduce to a simmer. Cook for 10 minutes, adding more water as needed so the sauce stays glossy.
- Season the mushrooms. Taste the mushroom mixture and finish with freshly ground black pepper.
- Finish and serve. If the polenta has thickened more than you like, loosen it with a splash of plant-based milk. Spoon into bowls and top with the mushrooms and sauce.

- Stone-ground polenta varies by brand, so follow the liquid ratio and timing on your package.
- Choose unsweetened plant-based milk so the polenta stays savoury.

- Lait végétal non sucré, au besoin (optionnel)
Champignons
- 30 ml (2 c. à soupe) d’huile d’olive
- 450 g (1 lb) de champignons, tranchés
- 3 gousses d’ail, émincées
- 30 ml (2 c. à soupe) de sauce soya
- Jus de 1/2 lime
- 125-250 ml (1/2-1 tasse) d’eau, au besoin
- 15 ml (1 c. à soupe) de pâte de tomate
- Poivre noir fraîchement moulu, au goût
Instructions
- Cuire la polenta. Préparer la polenta selon les indications sur l’emballage. Incorporer 2 c. à soupe d’huile d’olive, couvrir et garder au chaud.
- Dorer les champignons. Chauffer les 2 c. à soupe d’huile d’olive restantes dans un grand poêlon avec couvercle à feu moyen. Ajouter les champignons et sauter 5 minutes, puis ajouter l’ail et cuire 1 minute de plus.
- Préparer la sauce. Dans un petit bol, fouetter la sauce soya, le jus de lime, 1/2 tasse d’eau et la pâte de tomate. Verser dans le poêlon, bien mélanger, porter à ébullition, puis couvrir et baisser à feu doux. Mijoter 10 minutes en ajoutant de l’eau au besoin pour garder une sauce luisante.
- Assaisonner les champignons. Goûter au mélange de champignons et terminer avec du poivre noir fraîchement moulu.
- Finir et servir. Si la polenta est trop épaisse à votre goût, l’assouplir avec un peu de lait végétal. Répartir dans des bols et garnir de champignons avec leur sauce.
