Cooked low and slow on the stovetop, this polenta turns silky and rich with plenty of butter and Parmesan stirred in at the end. It makes a cozy base for a weeknight dinner or an elegant side for a dinner party.
Ingredients
- 4 cups water
- 1 cup milk
- 1 1/2 tsp kosher salt (adjust to taste)
- 1 cup coarse or medium-grind cornmeal
- 3 tbsp butter
- 1/2 cup grated Parmesan cheese, plus more for serving
- 2 tsp chopped fresh rosemary or parsley (optional)
Instructions
- Bring the liquid to a boil. In a heavy 3 to 4 quart saucepan or small Dutch oven, bring the water and milk to a boil, then stir in the salt.
- Whisk in the cornmeal. Sprinkle the cornmeal into the pan in a thin, steady stream while whisking constantly, until it’s all incorporated and no lumps remain.
- Simmer low and slow. Reduce the heat to a very low simmer, cover, and cook for 25 to 45 minutes, stirring about every 10 minutes, until the polenta is thick and pulls away from the sides of the pan.
- Stir in butter and cheese. Remove from the heat and mix in the butter, Parmesan, and extra salt to taste if needed.
- Serve warm. Sprinkle with rosemary or parsley and additional Parmesan before serving.
Notes & Tips
- A heavy-bottomed pot helps prevent scorching during the long simmer.
- Leftovers firm up in the fridge and can be sliced and pan-fried the next day.

- 1 tasse de semoule de maïs mouture grossière ou moyenne
- 3 c. à soupe de beurre
- 1/2 tasse de parmesan râpé, plus pour servir
- 2 c. à thé de romarin ou persil frais haché (optionnel)
Instructions
- Porter le liquide à ébullition. Dans une casserole épaisse de 3 à 4 pintes ou une petite cocotte, porter l’eau et le lait à ébullition, puis incorporer le sel.
- Incorporer la semoule de maïs. Saupoudrer la semoule de maïs en un filet mince et constant tout en fouettant sans arrêt, jusqu’à ce qu’elle soit bien incorporée et sans grumeaux.
- Laisser mijoter doucement. Réduire à feu très doux, couvrir et cuire de 25 à 45 minutes en brassant environ toutes les 10 minutes, jusqu’à ce que la polenta soit épaisse et se détache des parois de la casserole.
- Incorporer le beurre et le fromage. Retirer du feu et ajouter le beurre, le parmesan et du sel supplémentaire au goût si nécessaire.
- Servir chaud. Garnir de romarin ou de persil et de parmesan additionnel avant de servir.
Notes & conseils
- Une casserole à fond épais aide à éviter que la polenta accroche pendant la longue cuisson.
- Les restes durcissent au frigo et peuvent être tranchés puis poêlés le lendemain.
